Gratitude Friday

I am thankful...
1. For a wonderful day with Michael
2. For a trip down memory lane going through old year books
3. For a great brownie recipe - they were perfect for what I wanted this week
4. For the library as always - I have a huge stack books next to the bed. I enjoy being able to read so many different types of books.
5. For having a stack of mail love ready to mail out. I love being able to give friends a little bit of cheer.

I recognize that I have much more to be thankful for in my life.

Breakfast Burritos

I came across a link to an article about making "cheap" bulk breakfast burritos for quick morning breakfast. But their cheap, although might be cheap by some standards, weren't by mine. The burritos on that site came to .72 cents a piece. I made 20 burritos that ended up being .37 cents a piece. So Friday after dinner I realized I had all the ingredients and why not make some up.

Pictures, break down of cost and process over on my other blog.

Blog Hopping

Link for Valentine tablescapes - all sorts of them here. It isn't a blog. But pretty ideas.

Saving in Style - So cute as well as a good idea. I used to clip coupons but I haven't in a long time. What I don't like about coupons is they are for pre-packaged foods often.

I love using my crockpot. I do at least once a week. But I blog hopped on to this blog that did a YEAR of using the crockpot EVERY DAY for 2008 - A Year of Crockpotting

Growing up one of my Mom's quick meals was hot ham and cheese sandwiches. I actually crave them. And tried to make them not too long ago but they just didn't turn out like Mom's. Found this link for a recipe for them (now that blog is on my sidebar too because I found so many good recipes) and it made me want to try them again.

Christmas Baking

Today was really just a good day - really good memories made today. We had a day of baking and making Christmas goodies together. Michael usually just lets me have my domain of the kitchen and baking. It is something I enjoy obviously. But I have been a little stressed this year with the everything. I just haven't had my mind in it as much as years past. So Michael spent the day with me in the kitchen and we had a lot of fun. Michael made a batch of Festive Bark and then helped me dip Ritz crackers in pepperminty chocolate. We laughed and just had lots of fun.

So this year I made:
Maple Fudge
Chocolate Fudge
Mint Thins
Festive Bark
Chocolate Caramels - which didn't turn out - we over cooked them so too hard first year that has happened
Sour Cream cookies - which didn't turn out either
Molasses cookies
Cream Cheese Cookies with white chocolate drizzled on them
Peanut Butter Blossoms
Cardamom Butter Cut Out Cookies
and Magic Bars

I made the magic bars because the caramels and sour cream cookies didn't out this year. I made them while listening to the Nutcracker. It is a favorite of mine.

So heading to bed as I am tired tired. Will post pictures and recipes soon.

Christmas Ornaments - Part 2

Just a few Santa ornaments...which seem to be a favorite of ours. The one that my Aunt and Uncle gave us is a favorite of Michael's and mine. The 2008 Santa is called the Magic Man. We also have another yearly ornament coming but it won't be here until Wednesday. It is one that we were really searching for and having some problems. But did find one we liked on Cafe Press.

Just some daily stuff...Thursday night I made several batches of candy and then got dough ready to bake today. I made chocolate caramels, maple fudge, chocolate fudge and festive bark. I mixed dough up for molasses cookies, sour cream cookies, cardamom butter cut out cookies and cream cheese slice cookies. I haven't baked the cardamom cookies yet but will tomorrow. The sour cream cookies totally flopped. It seems to be an altitude issue as I never had this problem before living in Colorado. They just are flat and melt. I think I need to cut the sugar down but not sure. I still want to bake peanut butter blossoms and the cardamom tomorrow. Oh and the Ritz cracker mint thins - I need to make them too.

Thanksgiving

We had a really nice slow Thanksgiving. I paced myself on everything really well this year. Michael said I should have been taking some notes so that I remember how to do it next year - I might jot some down after this entry for next year. Everything got done right about the same time. Everything turned out. So it ended up being a very good Thanksgiving!

I hope everyone had a Thanksgiving filled with love. Just as I did. There are so many things I am thankful for and I try to be aware of them everyday as the pass through my daily life. And I will continue with that throughout the next year.

Happy Thanksgiving!

Art & Food

Today we were up early and out of the house for a Saturday. We had to go do some errands before going to The Gallery B&B's Art Show. It might be the last one of its kind as they are closing the Bed and Breakfast and 2 of their in house artists are moving to a new studio. So we really wanted to be there and support all of them as we have always loved all the art shows they have put on and they are just good people. I picked up a little bowl for Michael's office for his birthday - which he knows about since he was there and said he liked it. And we also got an art piece by Mary Mansfield. I really beautiful mixed media piece that we are probably going to hang in our bedroom.

They always have food out there at the shows one thing was ham with cream cheese spread on it and then wrapped around a pickle. It was really good. So I was telling the ladies there about something I made for a meeting that Michael went to...BLT Roll-ups. The BLT roll-ups was new for me. I was reading another roll up recipe that had bacon and thought why not BLTs. They ended up tasting pretty good. But I never can make my roll ups look perfectly round like most photos I see of them. Anyway....I mixed 1/2 cup of cream cheese (I used low fat cream cheese), 1/4 cup ranch dressing (also light), 1/4 cup mayo (and again light), 1/2 cup diced tomatoes and spread that on tortillas (used 8 tortillas total - I think). I cooked up a whole package of bacon but didn't use 5 slices. I broke the bacon up into little pieces and sprinkled on top of the cream cheese layer. I then chopped some greens up and sprinkled that on as the last layer. Rolled up and cut into bit size pieces - securing with toothpicks.

Here is a picture of them...

Side note: I love that plate I got it for $1 when we were out shopping while my parents were here for my birthday.

Denver Trip

We are back from Denver. Now it is catch up time for work. Being away for so long really makes things a little crazy when we get back.

But we also had a nice time in Denver. I saw my friend DM and her partner. It was great to see them! The time went to quickly for me though. I wish I could have spent more time with them. I felt like I wanted to talk about so much and time just kind of got away from me. But I am still thrilled that I was able to see them even for that short of time. Getting time with them both made my week!

Most of our week consisted of meetings. We got quite a bit accomplished while there. On Saturday morning Michael took a look at some pictures that were ruined. Michael's parents basement flooded and they had been sitting on the floor so they were ruined. Michael looked to see if he could think of a way to salvage them. One was a photo of a stain glass window that Michael's Gram was given for her good works with the youth of her church. That photo was ruined so with some pooled resources Michael and his Mom were able to track the window down. And Michael called to see if we could go take pictures of it. As it turned out the church was open so we went down to take pictures of it. It is a beautiful stain glass window in a very cute little church so I am glad Michael was able to get pictures. They turned out great. We then dropped one off at Wolf's Camera for 1 hour development and then ran to Michael's Arts and Crafts to get a frame for it. And then got another frame for the other photo which Frank took of Maroon Bells. So it was not only a productive day but a touching day seeing the stain glass in person. Michael's parents thanked us many times for helping them with the photos and frames.

Of course while in Denver we always seem to hit good places to eat! Michael's parents took us to Jim 'N Nick's BBQ for dinner. Yummy! I had never been there but everyone else had and Michael kept telling me how good it was and he was right. I didn't leave hungry. We also went to a really good vegetarian/vegan restaurant in Denver with my friends as they are vegan. The food there was beautiful. I had banana bread french toast with toasted walnuts and fruit. I had planned on getting a sandwich but then saw that on the menu and it was calling my name! We also got to have Beau-Jo's Pizza while over -- met family there. Michael's sister needed glutten-free and they had a whole page of menu devoted to glutten-free - even glutten free pizza. And she said it was pretty good for being glutten free --- and now knows when she is craving pizza where to go.

So we are back and busy working. I have several websites going and a logo to work on too. Michael has quite a few projects too so we are busy.

Vanilla and Cinnamon Crumb Cake

Every month on the first I am greeted with Michael saying, "Happy Anniversary!" Our official anniversary of when we started seeing each other is February 1, 2003 but it doesn't matter if it is February, July or November....if it is the first of the month I get greeted Happy Anniversary, warm embrace and passionate kisses at the start of the day. We love each other and try to celebrate that love and life. The moment we first knew we were right for each other is brought up each month in his words and embrace.

So today being the first of July I decided to make Michael something special for breakfast. I checked out the book Bread for Breakfast by Beth Hensperger recently from library. The book has some delicious looking recipes in it. And it is a book I would like to have on my bookshelf because I know I would use it quite a bit. This morning I tried Vanilla and Cinnamon Crumb Cake from it. And it turned out so good! Michael doesn't like nuts so when I find recipes with a crumb top usually it has nuts in it. And I have substituted other things such as more flour or oatmeal at times but this one didn't have any nuts in it so I flagged it right away as one I wanted to try.

Makes one 10-inch round coffee cake

Crumb Top
1 1/2 cups cake flour
2/3 cup sugar
1 1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
10 tablespoons cold unsalted butter - cut into small pieces (1 stick plus 2 tablespoons)

Cake Batter
6 tablespoons unsalted butter - softened (3/4 stick so basically the rest of what was left after the crumb topping)
3/4 cup sugar
3 large eggs
2 teaspoons vanilla extract
2 1/4 cake flour - unsifted
1 1/2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup sour cream (not fat reduced)

Preheat the oven to 350 degrees (325 degrees for a dark-finish pan). Line a 10-inch springform pan with parchment, grease the bottom and sides and set aside.

To make the crumb top, in the bowl of a heavy-duty electric mixer fitted with the paddle attachment, combine the flour, sugar; and cinnamon. Cut in the vanilla and cold butter on low speed until coarse dry crumbs are formed. Pour into a small bowl and set aside. If not using immediately, refrigerate until needed.

To make the cake batter, without cleaning the mixing bowl, cream the butter and sugar on medium speed until light and fluffy, about 1 minute. Add the eggs, one at a time, and the vanilla extract and beat well on medium speed for 30 seconds. The mixture will be loose. Add the flour; cinnamon, baking powder; baking soda, and salt and beat on low speed for 15 seconds. Add the sour cream and beat on medium-high speed only until the lumps smooth out and the mixture looks fluffy, about 30 seconds on medium-high speed. Do not overbeat.

Spread the batter evenly into the prepared springform pan. Sprinkle the top evenly with the crumb topping. Bake on the center rack of the oven for 45 to 55 minutes, or until the top is crisp and feels firm when gently touched in the center; the cake separates slightly from the sides of the pan, and a cake tester inserted into the center comes out clean (it may be a bit moist; that's okay). Do not overbake, or the cake will be dry.

Remove from the oven and cool in the pan on a wire rack for 5 minutes before removing the sides of the pan. Let cool at least 30 minutes before serving warm, or cover in plastic wrap to serve later at room temperature.
Store at room temperature for up to 3 days.

*** Of course I made a few modifications. I didn't have cake flour so used all-purpose - as I said turned out great. I add some cardamom as I just love the flavor and it sounded like a good add for this cake so just did a couple pinches of it in the cake batter. And last thing I changed was the springform pan. I didn't want to use my springform pan as I just didn't want fight with it leaking at all -- although I sure it would look prettier in it so might try that eventually. But today I just used a 9-inch square pan. Only problem that came with that is it seemed to need to bake longer. I baked 1 hour 10 minutes.

Insane with Christmas Baking

Okay so yesterday morning I finished up Christmas cards and then the afternoon I started baking. After dinner, I did some more baking -- more like mixing. I just mixed up several recipes of cookies and got them in the fridge so I could bake them today. By the time I went to bed last night I had a batch of peppermint bark, maple fudge and then dough for jelly cookies, cardamom butter cookies and molasses cookies.

Then today I made chocolate fudge, chocolate caramels (really this is Michael as he does all the stirring for it -- and they require constant stirring), festive bark (almond bark with m&m's and pretzels), mint thins and then I baked jelly cookies, molasses cookies, peanut butter blossoms, and cc peppermint cookies.

Tomorrow I am rolling out the cardamom cookies and also doing sour cream cookies. And making a crab dip for a party that we are going to tomorrow night.

I really don't like living in high altitudes at times. This year my molasses cookies turned out more like ginger snaps. And then cc peppermint cookies turned out tasting good but I always get them mounded high.....and this year nope flatter. (last year pictures and this year below)

Do you have something you make that you don't want to admit what the ingredients are in it? Like I really like homemade mac-n-cheese with Velveeta but I don't like to admit I use Velveeta. Even just sitting here typing the word out makes me cringe. I hate touching it and can't eat it straight. But I like how it makes mac-n-cheese taste.

Okay so I am always on the look out for things with mint in them as Michael really like mint. So in years past I have tried bars and cookies but never found something that was really good. Well in November I got my holiday issue of Kraft Food Magazine and they had mint thins. I looked at the recipe and though okay easy but umm RITZ crackers ewww no. No I don't have anything against Ritz with a veggie dip or some sliced cheese but Ritz in a cookie made me cringe. But it had mint and it was easy. SO yes I made them! (photo below) And....well I am surprised how well they taste. They do taste almost like a girl scout thin mint cookie. I actually will probably be making another batch as I think Michael's family will like them. And they are actually kind of pretty too so will look good on the trays I am making. But it is going to be one of those recipes that when someone asks me how to make them I am going to cringe and say Ritz crackers. I know probably very silly of me to worry about.

Last years CC Peppermint Cookies

Mint Thins

Other cookies I made today...

Peanut Butter Blossoms

Jelly Slices

Molasses Cookies (more like ginger snaps this year though -- again altitude)

Christmas Baking Upon Us

It is getting that time to bake so today when we went to the grocery store I picked up lots of baking supplies. I think though I am still suffering from sticker shock over the eggs. Eighteen eggs $2.93. Ouch!

I usually try something new every year sometimes those things don't get made again. Sometimes they get on the permanent list.

This is standard every year...
Sour Cream Cookies
Foolproof Fudge
Cardamom Butter Cookies - I roll out to do cutout cookies
Chocolate Caramels
Molasses Cookies
Festive Bark

Then I made these last year and they were a big hit so I am going to do those again...CC Peppermint Cookies - chocolate chip cookie recipe with 1 1/4 cup crushed peppermint bark.

And I have a couple new recipes I want to make and then one old one I would really like to make again as I miss them. I haven't made them in probably 10-11 years. One new recipe I want to make is similar to an old recipe I made the jelly thumbprints....but going to try this one. And then Peanut Butter Blossoms is one I used to make and always enjoyed. I also want to search down a recipe for gluten-free cookies as a family member will need those with all the gluten goodies around -- she needs something for her. So I will be checking out a favorite read to see if I can come up with something.

I always enjoy baking Christmas goodies. I make up plates and containers for friends and family. I also want to make scones as gifts. So I see quite a bit of baking in the near future.

Black Smoke for Halloween to make it eerrie....right? Not quite...

I have a pumpkin cheesecake in the oven. I found a tip that you won't have a cracked cheesecake if you put a couple teaspoons of cornstarch in it. So that is what I did (but it didn't work - at least not for me). I usually do the normal water bath for it - which is also suppose to prevent cracking but I found it doesn't always work either. So I am on the phone with Michael and then I realize the house is filling up with smoke....I look in cheesecake is fine but there was a little leaking that spill was burning something terrible. I have all the windows open...and exhaust fan going too. I haven't "noticed" my pan leak when it was in the bath.

I am not sure why I didn't think about that in the first place. I mean it is a cheesecake pan obviously how the thing fits together and all the years I have had it...it can't be perfectly sealed still so why I didn't put at least a pan under it....I am not sure. But there is one there now...of course as I am waving black smoke towards the open windows!

(going to post a picture and recipe of the pumpkin cheesecake on my cooking blog in a few days)

Quiet

I have been quiet because when we come home I crash. And then we have had work to do so been busy with that.

Today we went grocery shopping. This afternoon I made a few loaves of herbed french bread and sour cream cookies. Michael has a meeting tomorrow night that he is bringing snacks to so I am making a taco dip and then some french bread pizza. I felt like I smelled like basil all afternoon because the basil in the bread was so strong.

Tomorrow and Friday I am steam cleaning carpets as it will be in the 70's so I can keep the windows open while the carpet drys.

Randomness

This is going to be post of randomness thus the bullet points as nothing connects. That kind of day you know.

  • We had dinner with friends last night. Michael made a retirement video for one of the friends and we weren't able to be a the party when the showed it as we were in Shreveport so got together last night. We watched the video last night with them and the friend got all teary watching it again. And he has watched it several times already but still affected by it. I know it makes Michael feel good that his work touches people. It is hard not to be touched by his videos. I know I feel the same way about my parents video.

We all watched the Rockies win so that was fun and had great food. We had really good wine. One wine though I really liked even though I only had a sip as migraines still lingering but it had a grapefruit undertone that was very nice. Of course though I had to do something to make myself blush a million shades of red....I broke a spoon.

  • At Frank and JoAnne's last week we watched the first disk from Planet Earth. And that was so amazing! I loved it. But really what was the cutest is when the birds came on to their big screen high definition tv and Caesar immediately jumped from his slumber to go get them. He was reaching up touching the screen with his paw. He finally jumped up on the speaker next to the tv and sat on it reaching over to the tv to try to get the birds. We didn't get a picture because as soon as we would have moved he would have stopped. But it was SO cute!

  • Going to get my hair cut this morning. I will be having probably about 4 to 5 inches taken off - it is a length Michael really likes. Then tomorrow I will dye it black cherry. I have been trying to hold out in getting it cut because I wanted to donate to locks of love again. But I am just really getting frustrated with it - the tangles and it is just so dry. So I need to get some taken off. I want it couple inches past my shoulders.

  • Talked to my parents yesterday to get plans more firm for what we are doing and staying. We are going to the art museum Thursday. Friday we will probably take a little day trip. And then the rest of the time will be for shopping. I want new shoes - new mary janes to be exact. And there are DSW's in Denver so probably hit one of those.

  • Made Chili and cornbread on Saturday. And then yesterday I made a pie to bring to our friends - chocolate buttermilk. (links are to recipes over on my cooking blog)

  • We have a film shoot this afternoon. I am feeling really out of today though so I hope I can snap out of it before then.

  • Need to find my sister's birthday card to give to my parents....her birthday is on the 20th.

    A Quick Break

I am taking a little break to have an apple. I have one of those things that you put on the apple and then push down and it sliced the apple into nice wedges. I love that thing! I have been working on art in between chores today. But I can't begin to explain how good it felt to have my hands covered in glue, paint and then fanning through paper and various ephemera. I just popped in Narnia the DVD player and will get back to more art after I post this entry.

I am washing clothes and starting to make lists of what we need to bring on our trip but having problems as we will probably be in 2 to 3 climates. There has been snow in the mountains. And it is probably starting to feel like fall in Denver - though not quite yet here but close. And then Louisiana will probably be warmer then it is here. We have a ton of equipment to bring with us so I need to pack very efficiently so bring ton of clothes is not an option.

I made kind of an Italian stew on Thursday....combined great northern beans, browned ground Italian sausage, diced tomatoes, basil, garlic, onions, green & yellow peppers, chicken stock and cooked in the crock for 6/7 hours about 30 minutes before serving I added some cooked elbow noodles. The sausages I use come from Sam's and they have so much flavor that they flavored it a lot. Topped with some grated Parmesan cheese. And served with homemade French bread. It turned out pretty good. Michael said it is a keeper.

    Up at 6AM?

Monday was crazy busy and I suspect today will be too. We ran a ton of errands yesterday morning and when we got home I made a brochure for a class Michael taught last night. After we got home though Michael and I both felt like we had been hit with a truck. I ended up being bundled up in my fleece robe and wool socks drinking down some airborne - just in case.

At 2am I woke up with a really bad tension headache/migraine. I thought it was just because I was so tired when went to bed last night but by 3am I realized it wasn't going away so got up made some toast and took some meds. But now at 6am I am awake. The meds have caffeine in them and normally caffeine doesn't affect me but in this it does at times.

It is 9/11 today and I really don't feel it like I have in years past. I am thoughtful but I am not feeling the intense sadness I usually feel but maybe I am too tired and my headache is all I can handle at the moment.

Picked up some library books in our running around yesterday morning. I found a series but of course it isn't the first one and I am really the type of girl that likes to start at the beginning. But they didn't have the first one....wondering if anyone read them though to tell me if reading one out of order would really screw me up. The book is The Bitten by L.A. Banks (link to the website about the books). Vampire book again. I saw on my way to check out in the new books section - that there is a new(er) book in the series. I picked it up and looks like it has quite a few books in the series so might be fun to read them. I liked what I read on the back of the book so I guess I will see. I also got 2 book that I had reserved so I will start with those and might not even get to the LA Banks book before they are due. Uggh just did a search on the library's website and they have the 4th book which is the one I have (The Bitten) and then they have the 6th (The Damned) and then The Wicked which is the 2nd to last in the series (so far). And that is it. They don't have the whole series. So maybe I will need to read this one and see how if I like it enough to add them to my wish list of books. The same has happened with the Kelley Armstrong books too. They had the first book but no others in our library system.

Today we have to go out and film. And then run a few more errands. I really need to kick some ass on the scanning project.

Sunday I made this Mexican Chicken Stew in the crockpot...it made me all excited for cooking fall/winter dishes in it. I love the crockpot. The dish I made on Sunday...I sliced chicken into about 1 inch strips, coated them with a little taco seasoning and flour threw them into the crock, added half a bag of stir-fry veggies (peppers and onions), one can of diced tomatoes with the juice, one can green diced chilis, 3/4 cup salsa, one can of beans (would have liked 2 cans one pinto one black bean but didn't have both kinds). I cooked it in the crock for 6 hours and then served it over rice - topped with cheese and sour cream. It was very tasty!

Well feeling tired again...so going back to bed for a few hours before needing to get up and film.

(cropped image from a piece that was just for me...for to let my emotions out. It was right after Katrina. Thinking of 9/11 made me think of it too though.)
